Fish en papillote is great fun to eat, it takes care of itself in the oven in around 20 minutes and it's brilliantly non-smelly! Perfect school night dinner and a delicious meal for both grown ups and kids.

These fish rissoles are a great way to enjoy the goodness of fish without the overpowering taste or messing around with whole fillets. Corn or diced capsicum are a great addition to the patty mix - they help mask the fishy taste further and add extra nutrients to the meal. The patties themselves are beautifully crisp on the outside while oh so light and fluffy on the inside!

Melt in your mouth fish fillets served with an Asian greens and organic soba (buckwheat flour) noodle stir fry. Amazingly flavoursome and good for you. The fish was so tender and moist it was hard to plate it up in one piece!

It is great fun to have a make your own pizza night where everyone, kids and grown ups alike, can customise their toppings to what they like. One rule though, make sure that there is at least 2 vegetable ingredients on the pizza. Wholesome and additive free base, sauce and toppings. Top that!

I think the attribution of the dish to the Greeks, however accurate, comes from the medditteranean feel and simplicity of the flavours: fresh fish combined with a slightly acidic tomato based vegetable topping. Since the dish is normally served cold it is perfect for summer. But when warmed up the flavours become so much more intense and the fish more tender, I'm surprised no one had ever thought of it before!

The dish ticks all the right boxes. It's quick. It's tasty. And packed full of nutrients, including loads of omega 3 from the fish and the avocado. The salmon is crispy on the outside, while buttery and juicy in the middle - it simply melts in your mouth. The salad is zesty and fresh and can be thrown together in minutes.
