The secret to a well cooked octopus lies in the cooking time itself. It either has to be flash fried for literally a minute or two, or poached for at least an hour in order to achieve a soft, non-rubbery texture. The effect? Juicy, soft octopus perfectly matched with a crunchy vegetable salad. Bellissimo!

It is great fun to have a make your own pizza night where everyone, kids and grown ups alike, can customise their toppings to what they like. One rule though, make sure that there is at least 2 vegetable ingredients on the pizza. Wholesome and additive free base, sauce and toppings. Top that!

This 5 minute lemon prawn and crab spaghettini is one of my favorite summer meals. Not only is it quick, it's also tasty, fresh and light. It is great for using up any left over seafood (think Christmas time) and it can be easily adjusted to feed one or many.
