As the jelly begins to melt, the flavours of masterstock begin to dance in your mouth. Combined with the sweetness of the fish it is one of my favourite (weird but oh so good) food combinations!

Spiked with a little red wine for deep colour and flavour and with a helping of lemon zest, it is a more festive rendition of the popular dish.

The allure of crimson in the soup is matched by the intense flavour of beets and, perhaps because of its peasant origins, the recipe lets nothing go to waste. Thickened with a dollop of cream, the soup can be served 2 ways and the following recipe allows for you to try both.
