The secret to a well cooked octopus lies in the cooking time itself. It either has to be flash fried for literally a minute or two, or poached for at least an hour in order to achieve a soft, non-rubbery texture. The effect? The chicken and beetroot dinner tastes great and is easy to make. It is a great fitness meal as it is relatively high in protein, low-gi carbs and filled with the goodness of iron, magnesium and potassium found in the beetroot spinach combo which are helpful in managing muscle recovery and help prevent cramping. When it comes to this light supper bruschetta it is all about feeling good: the vibrant colours and intense flavours and aromas speak for themselves. Good quality olive oil, freshest basil and goat's cheese. I love a generous sprinkle of freshly ground black pepper. Perfect (Italian) summer supper.

The best thing about it is that it can be served both as a side and as a main. Those not too convinced about salads as such can be persuaded toward it with a little seared, sliced steak or barbecue chicken mixed in, creating a Vietnamese version of what is more commonly known as a Thai beef salad. It's also a great side dish to lightly fried or steamed fish.

I think the attribution of the dish to the Greeks, however accurate, comes from the medditteranean feel and simplicity of the flavours: fresh fish combined with a slightly acidic tomato based vegetable topping. Since the dish is normally served cold it is perfect for summer. But when warmed up the flavours become so much more intense and the fish more tender, I'm surprised no one had ever thought of it before!
